I have created an elegant sweet puff using my hand rolled homemade puff pastry. It is filled with a smooth and delicate white chocolate custard topped with a sunflower seed crunch.
This puff is sweet yet deliciously smooth and light. A deep caramelised flavour custard is achieved by slowly roasting some white chocolate.
A sunflower seed crunch is created by letting seeds infused in caramel set and cool! This topping on the puff adds texture and a slight savoury flavour!
