Financier is a French almond cake. I have created a chocolate version of this cake and also added BlackBerry to the mix before been baked.
I am also very happy that blackberry season is here (a little early this year!) to be able to use them in this delicious cake. It is then finished with a silky smooth mascarpone mousse and topped with a macerated blackberry to showcase the beautiful blackberry flavour.
