This Winter warmer dish is full of comfort food goodness and seasonal ingredients. I sauteed onion and garlic, added chopped tomatoes-cooked in a splash of red wine and balsamic and then added the lentils.I allowed them to cook low and slow to create a rich hearty stew. Roasted cabbage with some spiced butter and red onions pickled in lemon juice and salt were then added to create a subtle spice to the dish.
