This new savoury tart is made up of a light and crisp homemade savoury pastry base with a creamy flavoursome filling of roasted sweet potato and rosemary labneh.
Labneh is a middle Eastern yogurt cheese. This is where Greek yogurt is strained through a sieve and muslin cloth for 2 or 3 days giving it a cheese like texture. I then add garlic and chopped Rosemary to it.
The sweet potato is roasted lightly to give an intense and deep flavour. The sweetness of the potatoes are a perfect combination with this shape and tangy labneh.
