I have created a satisfying Winter Veggie Puff that is comforting yet wholesome for these cold winter days. A Rich Red Onion Jam, St Tola Goats Cheese and a Zesty Gremolata are spread on the top of my all butter Homemade Puff Pastry.
The Red Onions are slow cooked for about an hour giving them a rich intense flavour. St Tola Goats Cheese from Ennistymon is smooth and sharp, adding a nice balance to the buttery flaky puff pastry. After the puff is baked I spooned a little gremolata on the top to give a nice zesty finish.
Gremolata is an Italian dressing consisting of parley, lemon zest and garlic. I have added toasted cashew nuts to this for an extra crunch.
